Chicken Fajita Recipe | Camp Chef

One of the easiest healthy dinner recipes that feed a crowd. Red and green peppers, sliced onions and chicken breasts, mixed with some simple spices. Perfectly grilled and served on flour tortillas. Simply Yummy!

Boneless, skinless chicken thighs or breasts, cut into strips
Peanut oil or Olive oil
Salt and pepper to taste
Cumin to taste
Worcestershire sauce
Red onion, cut into bite sized pieces
White onion, cut into bite sized pieces
Red and green bell peppers, sliced
Jalapeno, diced – 1
Fresh oregano, chopped
Salt and pepper to taste
Ingredients for Guacamole Mix
1 Tablespoon onion, minced
2 ripe avocados, mashed
1 fresh lime, juiced
Salt to taste

Preheat Flat Top Grill or griddle to medium heat. In a bowl mix boneless chicken breast or thighs, salt, pepper and cumin. Add oil to the grill and cook until chicken starts to brown then add Worcestershire sauce. On other side of grill, cook vegetables separately: Add oil to grill and and add vegetables. Season with salt and pepper and cook until tender. While chicken and vegetables are cooking, mix ingredients for guacamole mix in a bowl and set aside. Put chicken, vegetables and guacamole in a flour tortilla.
